Pad Thai Recipe


Many years back I came across this interesting dish called Pad Thai! Since then, I can never miss the opportunity to taste this dish. And over the years, there have been many interesting variations of the same. Pad Thai originally is a dish that is comprised of stir-fried noodles combined with various other ingredients. Primarily, ingredients such as fish sauce, eggs, shrimp or chicken are used. Here, we shall know about some delicious versions of Pad Thai recipes.

Pad Thai Recipe #1 Ingredients Rice stick noodles (250g packet) Lemons - juiced (2) Peanut oil (2 tablespoons) Chicken breast fillets - thinly sliced (2) Eggs - lightly beaten (2) Bean sprouts (1 cup) Coriander leaves (1/2 cup) Lime wedges - to serve Fish sauce (2 tablespoons) Brown sugar (2 tablespoons) Roasted peanuts - finely chopped (1/4 cup) Green prawns – peeled and deveined (500g) Green onions - thinly sliced diagonally (3) Small red chilies, deseeded, finely chopped (2)

Preparation Begin by placing the noodles on a heat proof bowl and pour hot water over it. Place it aside for a while and then drain. Rinse the noodles under cold water.

Meanwhile, combine fish sauce, lemon juice and sugar in a jug. Mix it well with a fork so that it combines well. Then, heat a wok over high heat and add some oil. Now, add the chicken and stir-fry it for a period of 2 minutes. Then, add the chilies, prawns and onions and stir-fry the same for 2 minutes. Once done, add the noodles and stir-fry it again for 2 minutes.

Then, add the lemon juice mixture to the wok and toss it well to combine. Pour the lightly beaten eggs over the noodles and stir-fry it for a minute. Add sprouts and toss the whole preparation well. Once done, spoon the Pad Thai onto the plates and sprinkle some peanuts as well as some coriander leaves. While serving, you can use a lime wedge.

Nutritionist and author Jonny Bowden has created several lists of healthful foods people should be eating but aren’t. But some of his favorites, like purslane, guava and goji berries, aren’t always available at regular grocery stores. I asked Dr. Bowden, author of “The 150 Healthiest Foods on Earth,” to update his list with some favorite foods that are easy to find but don’t always find their way into our shopping carts. Beets: Think of beets as red spinach, Dr. Bowden said, because they are a rich source of folate as well as natural red pigments that may be cancer fighters.How to eat: Fresh, raw and grated to make a salad. Swiss chard: A leafy green vegetable packed with carotenoids that protect aging eyes.How to eat it: Chop and saute in olive oil. Turmeric: The “superstar of spices,” it may have anti-inflammatory and anti-cancer properties.How to eat: Mix with scrambled eggs or in any vegetable dish. Frozen blueberries: Even though freezing can degrade some of the nutrients in fruits and vegetables, frozen blueberries are available year-round and don’t spoil; associated with better memory in animal studies.How to eat: Blended with yogurt or chocolate soy milk and sprinkled with crushed almonds. San Diego Magazine’s "Your Recipe Competition" is searching high and low for the premier, innovative, unique seafood recipe. So get your creative juices flowing, throw on your chefs’ hat and preheat the oven to create your own original recipe! The rules to follow are simple: - Fresh seafood must be the primary ingredient - The recipe must somehow incorporate plantains—the "potato of the tropics" - The healthier the recipe is, the better your chances will be of winning the contest - Keep the preparation time of the dish at no more than twenty minutes - Keep the cook time at no more than thirty minutes with no exceptions! - Do not exceed ten ingredients - The dish should be enough to feed a family of four - Recipes for hors d’oeuvre and appetizers need not apply, only entrées! - Include one photo of the completed entrée with the recipe so the presentation can be included in judging - This recipe must be original! Meaning not previously published in a cookbook or found in an online recipe—finalists will be asked to certify the dish’s authenticity - Include a description in thirty or less words of how your dish tastes in all of its scrumptious detail - There is a $40 limit on all ingredients The recipe contest presented by San Diego Magazine will accept submissions beginning September 1st, 2008. Ingredients Medium shrimp - shelled and deveined with shells reserved (1 pound) Water (4 cups) Cleaned squid (1 pound) Olive oil (2 Tablespoons) Salt (1-1/2 teaspoons) Medium-grain rice (2 cups) Sea scallops (1 pound) Frozen peas (1 cup) Medium onion – chopped (1) Ground saffron (1/8 teaspoon) Garlic cloves - thinly sliced (3) Red pepper - cut into thin strips (1) Tomatoes - with juice, chopped (1 cup) Preparation For the shrimp stock: Take a saucepan and combine the shrimp shells with some water. Bring this to boil and then reduce heat. Cover it partially and let it simmer for half hour. Then, strain this through a sieve and then discard the shells. In the meantime, rinse the squid with some cold running water and dry them with paper towels. You need to slice the squid bodies in a crosswise fashion. Slice them into ½ inch rings. Then, cut the tentacles into 1-inch piece. Heat some oil in a non-stick skillet over medium low heat and place onion and garlic in this. Cook with constant stirring for about 8 minutes. Once the onion turns tender, add red pepper and cook for 4 minutes. Then, add some squid as well and cook for about 2 minutes. Once done, add some tomatoes with their juice along with shrimp broth (1/2 cup) and sprinkle some salt for taste. Heat the preparation till it boils and then, reduce the heat. Cover and let it simmer for half hour. Now, add the rice, the remainder shrimp stock, saffron and some salt as well. Cook it to a boiling point over high heat. Once done, reduce it and cover so that it simmers for 20 minutes. Now, pull and discard the tough muscle from each scallop and cut it in a horizontal way. Then, stir the scallops with the shrimp, frozen peas and the rice mixture in a skillet. Cover this skillet and cook this preparation for another 10 minutes. Your delicious seafood paella dish is ready to be served.
